You’re a Goddess – and so is your salad dressing!

Hello, my beautiful friends!

I cannot even BEGIN to tell you how insanely crazy my last couple of months have been. You know, because, LIFE. Oh life… family visiting from out of town, which is always a great thing but a little crazy. Having your husband away for the last eleven weeks for work – YES, ELEVEN WEEKS – makes everyday life exponentially more challenging. All of a sudden, I have to wake myself up earlier to take care of all those little mundane tasks that we used to split, like walking the dog, feeding the dog and the cat, brewing the coffee, doing all the laundry, all the cleaning, all the cooking!!!

Oh, and because I’m a masochist, I also changed jobs a couple weeks ago. Yes – chaos is my food, and I am a glutton.

Needless to say, I’m exhausted. BUT… in the midst of all of this fun and pandemonium, I also not surprisingly gained a few pounds. So I’ve revived my fervor for SALADS! My 9-5 gig is located in NYC, and thankfully there are delicious and super quick salad-to-go spots everywhere. But after shelling out a pretty penny multiple days for a salad, I realized that I can easily replicate these at home.

There’s nothing earth shattering about these tasty salads which typically consist of fresh greens such as spinach, cabbage, romaine lettuce and other foundational roughage, a few ounces (2-4) of protein like chicken or salmon, a few tomato pieces, maybe a dusting of nuts, and delicious dressings like the trendy and now famous Green Goddess. After a couple attempts at cracking the ingredient mix in this dressing, I think I’ve got it!

It’s incredibly fresh and the best part is my rendition is LOW FAT/LOW CAL! There’s no mayonnaise in this version. And you can lower the fat content just a little more if you so choose. But the herbaceous and fresh flavors are so hard to resist. Consider this your healthy version of potato chips – you can’t have just one serving!

For those of you who don’t fancy cilantro, you can just double up the basil. And personally, I like to blend everything to a chunky consistency, just so I get bursts of flavor in the small bits of herbs with every bite.

Ingredients:

  • 3-4 garlic cloves, chopped or minced
  • 3 TB extra virgin olive oil
  • 1/2 cup Greek Yogurt (I prefer 2% fat, but for lower calorie/fat content, you can use fat-free)
  • 1/3 cup fresh Italian parsley
  • 1/2 cup fresh basil
  • 1/2 cup fresh cilantro
  • 1 TB prepared horseradish
  • juice of 1 lemon
  • salt & pepper to taste

Combine all ingredients into a blender or food processor, and blend until smooth.

I dare you not to dress EVERYTHING with this… but then again, you’re a goddess – you can do what you want!
